I made some of these ribs. They hit the spot. The rub made the outside beautifully colored. So good they realy didnt need sauce, but used it any way. Make plenty and serve with plenty of napkins. thanks cw its a winner.

Gotta love that ol lectra glide. Im a motorcycle mechanic by trade. I think that wood bike might be the ticket. If it broke down you could use it for smoker wood. My current bike is a sportster setup like a dirt tracker. Good for a short blast to blow the stink off.

When I have cured deer ham I have used brine and injected some to speed up the proccess. I was after "corned beef or pastrami". Its good but Its not a piggyham.
