that batch was a small one so I did it in my Gosm gas smoker they are nice heavy duty racks really like the smoker I have 4 smokers total another gas smoker that is made by the same company it needs some TLC in a bad way I also have a UDS i Built and I have a electric smoker I built it is a big boy ...

that could be the problem i am not much of a wine guy and you can really taste the wine in this sausage its not bad i just dont care for it I gave some to some friends and they liked it and it is better heated up so i will be throwing some of it on the bbq

Did not see your post until today I smoked them with one pan of chips but my chip pan is a cake pan and holds about a pound and a half of chips so it smokes for 4-6 hours they are great tasting everyone likes them

I work for the County Road Dept its a great job close to home 10 min drive to the shop I am not gonna get rich working there but it does pay for my sausage making supply's :-) I have been there 14 years next month and really enjoy the work I am working outdoors most of the time I have Smoked Salmon ...
