There was some talk very early in this thread about injection was essentially 'required' because the brining will not penetrate all the way to the bone. Further, it was said one can't cure hams in just salt as it would not penetrate all the way either. How are American dry-cured hams, Spanish Serran...

Beginner Brining Question
I have a set of 3.5 gallon food lugs (with lids) that I do my corned beef/pastrami brining in. When I put a ~5lb. brisket in them, it takes about 2 gallons of liquid to cover the meat. The brine recipe that I use calls for (and makes) 1 gallon for a brisket of that size. What I have been doing is ju...

I considered getting the unit with the LCD as well. However, I decided against it since the only way to see the LCD was to open the curing chamber to look at the display. Since I'm nosy by nature and want to know what's going on inside, I got an Extech 445715 with a wired remote probe. I drilled a h...

CW, Already dialed in on Uwanna's wisdom. 'Preciate the heads up though. As far as specific issues go, I have been talking "humidity" with folks in a post called, "Stalking the elusive humidity". We have been chasing the esoterica of water vapor over there. So please have a look at that post when yo...

Dave, The quick difference is this. With the unit that you have, you put the food in the bag and place the open end of the bag into a suction chamber and it pulls the air out of the bag. Problem is that ANY moisture, like marinades, start getting pulled out as soon as you create even the mildest vac...

uwanna, I would certainly have a "look" at this model when you are in the market. This thing is built like a brick ****house. Not as noisy as I thought that it might be either. Found it cheapest online from a company called ElectronicsShowplace.com. Quite a few places carry it (Amazon and the like) ...

Thanks for the input, folks. First, to uwanna, no heat source inside box. Sitting in non-climate-controlled shop (did I mention that today was #62 over 100 degrees so far this year?); so inside heat source may not be issue. I will have to wait until my USB datalogger is full and I can plot the compr...
