To the best of my failing memory, this looks almost like what I remember with the exception of starting out with a freezer.

Appreciate the links and other information. All are interesting, but I'm still searching for the original document that had part numbers for temp controllers, and hydrometers that controlled the humidifier. If I ever find it, I'll share the link/site.

Texas Sausage
Last week while passing through Taylor Texas I stopped at Louie Mueller's BBQ and had some fine sausage. It is described as an all beef, German type sausage. Does anyone have a recipe that I can use as a starting point to try and get close to duplicating this sausage?
