thanks guys,so if I understand it right fermento doesn't make it "hot" or "spicey" but adds a different "tang" altogether?

looks great,got a question for you guys.How do you separate the individual links when you first stuff them? I was twisting mine but it don't work out well.I see Big Guy ties his off but seems like alot of work,just thought there might be an easier way.

well it certainly doesn't have that,still no word from them yet but I am pissed .Had all my meat and stuff ready to go then had to freeze everything.So whats the deal with watts,they have one 2000 watts-2.6 hp and another 3000watts-3hp.That must be just a gimmick or something.

Bought a new 2.6 HP 2000W CUISINPRO Electric Meat Grinder for to do some moose sausages.Gound up about 50 lbs of moose and the damn thing quit on me.Started to smell a little bit but thought that was normal because it was new but after a while it just started tripping out even with no attachment add...

DAMN, ssorllih, thats some heavy calculating there,lol. I am not that particular.Moose is pretty much lean anyway and if I see a bit of fat,I leave it and roughly deduct the fat content.Not enough room on my counter for a calculator,my beer is in the way.Thanks for the great info guys.

Iam trying to get my moose/pork ratio right but can't figure it out.I want 70% moose/30% pork.7lb/3lb is easy but what if I want 1o lbs moose/?pork.anyone??

trade ya,lol.Ever tried to get beef fat,ask for the trimmings of the steaks and roasts.Thats what I did and it wasn't a problem.They only throw the stuff away anyway and I think its a better flavor.
