Alternatives to poach and sear

When doing sausage to order the traditional poach, hot hold, and sear method is pretty standard. Does anyone use a different method for cooking sausages quickly? I worry that poaching them might leach out flavor. Has anyone tried steaming? Or slow roasting? (temperature control issues?/shrinkage?) T...

Oh this is not a dry cured sausage or charcuterie biz. It's just a street food cart looking to do really high quality sausage.

I'm actually originally from New Orleans. Donald Link of Cochon and Herb Saint opened up Butcher. They make all kind of sausages and charcuterie. Definitely check out Cochon and Butcher for his sausages and cured meats.
