I have never seen one of these things and they don't look like they would be much to make. If you do not have a chance to get on of these, I have a little trick that helps get the casings on the stuffer tube. Get the casing started on the stuffer tube and then push about 3/4 inch of meat out of the ...

IdaKraut Thanks for posting the recipe. I had to guess where to flair that fitting and it looks close but not right on. You can heat it again with a paint stripping heat gun and reshape while it is hot. It probably worked OK the way it is. I sure like the looks of your recipe. I think you managed to...

Kirby, where did you get the molds? Looks good, BTW,. Idakraut The strips on the side of the board are 1/4 inch thick poly cut out with my table saw and the other tool was just a strip of 1 inch thick poly that I used my dado blade to cut out the center. The white powder on the plastic wrap is powd...

Fat extraction for GB Jerky

Fat extraction for GB Jerky I showed this system on another forum but I thought your guys would be interested in the process. I received 15 pounds of high fat meat patties from my brother-in-law. It had way too much fat, probably 20+%. I tried a fat extraction technique I learned on the food tech ch...

I have substituted cracked black pepper for the whole pepper corns. I feel it helps spread the pepper flavor better. I just never liked biting on a whole pepper corns.

The sausage looks great NorthFork. I like the wood smoker. It reminds me of my dad's old smoker. They smell great all year long.

Thanks for the nice post Chuckwagon. You are right it is fun when we get together to do a batch. Lost of laughs and lots of work. I am going to retire soon and am looking forward to have more time to make some of the great recipes that the members have come up with. We have developed a excel sheet t...

Well interesting you should ask. This is like loading a cannon. you must make some foot ball shaped balls of meat and set them in the end. The loading tool has on surface that is flattened out to let the air get by. This way you load the stuffer full with out trapping air in the meat. This picture c...

When we have a group of us and it is cold outside. This is how we handle it. Set up the old tent and get after it. The buckets are just the ground pork. We have a sink with hot and cold running water out there and lots of light. http://i943.photobucket.com/albums/ad274/pikeman_95/A%20%20SAUSAGE%20WI...

I have not been able to understand the benefits of a water stuffer (other than the large vertical commercial ones.) I wish I could try one to see what the rage is all about. It looks like they take up a lot of room and they appear to be very slow compared to a good vertical crank stuffer. (Not a cr...

I make a a 6 and 4 inch stuffer. I use 2 inch thick hd poly for the piston and the adaptor plate which provides the threaded fitting for the stuffer tubes. You are correct that it is very difficult to find pipe that is smooth enough for the seal that you need. The piston clears the tubing inside by ...

This seems to me very close to a commercial and not so much as a helpful how-to post. Most of us here are able to duplicate a design and method and most of us are cheerfully willing to share our knowledge and experience. I would be interested in learning how you return the piston to the start and h...

Hi all. I am the Kirby Cannon guy. Here is a link of the 15 pounder being run with the foot control. This is a real one man process. My friends borrowed it and I made a video with them using it. Neither of them had ever used it before. They do not have it set to run very fast but that is OK. It was ...

Summer sausage,kielbasa with Kirby Cannon

Pmmpete and his friend Brad borrowed my 15# KIRBY CANNON with new foot control to make Summer sausage and Kielbasa. Neither Brad or Pete have used this stuffer before. Pete would have done the post but he is off playing on the Snake river. Pete used Mr.Walleyes recipe [thanks Mike] Here is part of ...
