yes, got an AA & couple prestos...know the routine just never saw this particular method addressed .... many dry can cooked ground beef & have great success...I want to preserve this giant brisket I'm getting ready to put in my MB electric smoker ... definately NOT wanting to freeze after my losing ...

thx Devo...I have books on canning meat but can't find anything specifically "smoked" meat.... I've canned many different things with meat...however I am interested dry canning sliced smoked brisket ... has anyone canned smoked meat...if so how did it turn out, mushy, or did you cook it partially be...

Canning fully cooked smoked meat safely

after losing $100's of meat & other items in my freezer I hardly have the heart to store my smoked meats in the freezer. I have searched gov sites & other sources on this subject coming up with no info except on youtube. Pocono Prepper posted a video of canning smoked brisket, I have a full size one...

Thank you Gulyas for the fast response. my intention, since I live a ways from town and gas is $4/gal is to freeze until ready to process or cook. I understand there has to be an effect (thx to the book home meat process....) on the meat just wondering if it's very noticeable. Ohh, I'm in the proces...

I was thinking of buying some bellies and a brisket maybe a few other cuts to put in the freezer so once I'm ready I'll have it on hand

Does freezing have a noticeable effect on the meat, especially the bellies? I have a couple butts in there now

Hi Ray, Yes I hope the next batch is shorter, I used a stand mixer with a grinder attachment. I literally cramed it full...once I took the plate off I realized it was totally wrapped with white stringy sinuew or tendons This was probably the main reason it took the grinder so long...I almost gave up...

Realized the answer re the casings color...re-read the list What should I use for the ancho peppers in the orig list of ingredients, fresh/dried, hot/medium...haven't a clue about these, I've used banana peppers but not the ancho Ordered the hog rings in 3/4 and the casing clips so disregard that ? ...
