Thanks much, makes good sense, I'll do it. I have enough heat to get it as hot as I want, the concern is that the lower part of the chamber would get too hot because the element is cranking hard to keep up with the heat loss. everything but the floor is heavily insulated, I'll deal with that next. I'm redoing an old 48" stainless propane smoker, took out the burner and replaced with an electric element on digital controller. I've heavily insulated the top and the walls, is there a benefit to insulating the floor. Since heat is rising I wasn't sure. I apologize if this is a silly question. tha...

hot dog casing size
Ive seen that many use a 24-26 mm sheep casing. Id rather use hog casings, I can get hog casings that are listed as up to 28 mm and some that are 29 mm to 32mm. Id like a bigger dog but dont want it ridiculous. What are your thoughts, experiences

curious about smoke times and temps, and of the finish IT. My first batch i cold smoked for 8 hrs then hot smoked @ 180F (the lowest temp on my pellet smoker) untill 130F. I wondered about the top vent, it seemed like a screwy placement. Would i benefit from making a stack /damper of some sort on the roof and closing off the front one?CrankyBuzzard wrote:

electric heating element ideas
I'm looking for suggestions for a heating element for my cabinet smoker that is 48"x24"x18"(265cm x60cm x45 cm) i already have a controller, but the little hot plate that came with it wont get past 90*F. I could get a bigger hot plate but am hoping for something better. I've seen replacement element...

i just bought this stainless steel smoker for a song, plan to use it for cold and some hot smoking. Its a gas smoker but I have an electric element and controler that I'm going to use.
