Those look great. I really like the looks of the stuff they carry at butchers pantry......but unfortunately they dont ship to canada. Yes they will be still warm when I get them.......mmmm. Thanks for the info Bob. I was thinking there would be more steps to remove the urine smell.

Hog bladder

I plan on doing a culatello in the next few months. I have some of the dried pasted hog sheets, but I have access to fresh hog bladders. I would like to try using the bladders but I cant find any info on how to prepare them. Does anyone have any experience in this?

I have ordered the chr hansen products from the sausage maker before, they take bout 10 days to arrive. So they are not frozen anymore, but I have used them and had no issues.

Can would pure vitamin C do the same job as sodium erythorbate then? I have been dry curing sausage for a while now successfully without it, like Chris Im just after a brighter product.

Looks awesome Chris, I was looking for sodium erythorbate locally. Stuffers doesn't list it. Where did you get yours from? The sausage maker has it but with the Canadian dollar these days it starts to get pricey. I might have to try your recipe with moose.

Thanks CW, Its a standard sized fridge, maybe 18 cft I think. I have dowels that fit inside which I use for hanging .
