I'd be interested to see how this comes out. I'd be concerned I wouldn't get a good bind and the sausage will be super dry and crumbly using a loin only. Personally, I think you'd be better off curing some butt the same way you plan on doing your loin then grinding this - or using a combination of ...

I just purchased 28lbs of pork belly I plan on curing and cold smoking. I was wondering if anyone has tried Sassafras as there smoke source? I have corn cob pellets, Apple pellets, cherry pellets, and beech pellets. I also have apple, cherry, pecan, and hickory wood chips. What do u guys reccomend?
