Thank you for all of the compliments! I have a 1st generation masterbuilt smoker I got new off of Amazon and I made the mailbox mod for it. I did have the vent only open 1/4. The smoke does seem to go through the smoker at a good pace.

Well I finally did my cure sausage yesterday. This is the first time I have smoked sausage so it was a learning experience. Shuswap that is a great idea on the wing nut. Next time I am out running around I will have to pick up one. El Ducko, I like the Idea of the wooden dowels I never thought of putting poly on them. I was finally able to get the CB done. First thing I learned was injecting the pork loin was more of a challenge than I thought it would be. Trying to keep all of the brine from leaking out of the needle and not all over place was interesting. Then pulling the needle out of the loin and not squirtin...

Very nice looking CB el Ducko! How is it with the apple wood smoke? I was wondering what type of wood would work best for smoking it. I was thinking of either apple or maple.

A thought came to mind that a label inside the package would be completely durable.
That is what I do. I just use excel and print out as many as I need. They work out very good, it beats writing on the bag.

I'm checking in. I made the breakfast sausage this morning. I used a grinder for this, if I had a couple of big chopping knives i would have tried doing that.
