There are plenty of Sprouts around here too. I didn't know the made sausage. I have been there once or twice, and it seems like a nice store. It's probably worthwhile to ask at any grocery or meat shop in your area that makes sausage if they'll sell you some casings. I bet most will. They make the ...

The packages are misleading, celery has naturally occurring nitrate and that is why they are using it.
Here is a link to an article on the subject. http://blogs.mcgill.ca/oss/2013/04/04/i ... red-meats/

The smart folks will be along shortly.

Smoked onions or garlic are both fantastic mixed in with mashed potato. I also like both in a quesadilla with basil and grilled chicken.

I am leaning towards smaller chubs for my first try. Maybe try a few recipes in smaller amounts to try and find something I like. The only summer sausage I have ever tasted was the mass produced one sold during the winter holidays, I did not care for it. Thanks for the advise guys, it is greatly app...

I think stifolder is similar to summer sausage, there is a recipe here. http://www.wedlinydomowe.pl/en/viewtopic.php?t=6052&highlight=stifolder Thanks Gulyás! That looks a lot more interesting than summer sausage. With 4 days of smoking I think this one will have to wait for winter. Perfect!

I prefer to use fresh garlic in sausages and when cooking sauces. I do use the dried for rubs and such.

Sprouts Farmers Market sells the pre-tubed casings if you ask at the meat counter. Not sure of the exact price, but each piece is just over $2. Looking at their locator map it seems they are growing quickly.

Re: [USA] Chorizo (Mexican style)

For those of you who, like me, enjoy scrambled eggs with chorizo for breakfast but are appalled at the amount of fat in commercial products, here's a good Mexican-style chorizo. It's a fresh sausage. However, it's good smoked. (Make sure to add the optional cure if you smoke it.) Here's the recipe ...

Summer Sausage casings?

I have not made summer sausage before and I was thinking I should give it a try in the coming months. It looks like most folks use synthetic casings. I was thinking of using the 60mm x 16 in. collagen. Is this a good choice for me? Anything I should worry about or consider as I am not sure of which ...

Darwin, my maple breakfast sausage mix is from www.psseasoning.com It is #274. I do add slightly less than 1 Tbls. of cayenne pepper to a 10# batch, which is just the right amount of heat for my family. Which I guess you could say is my 'signature' touch. I have to say this is the bees knees for ma...
