Freezing cold smoked products

Curious if anyone has a method for freezing cold smoked and dry cured sausage. It's in beef mids, I plan on vacuum sealing. Should I remove the casings? Slice before freezing or leave intact? Any advice is valued and appreciated.

I make a lot of deer sausage and bresoala/lomo and pastrami out of deer and find that the curing/ salting takes the deer flavor (that I happen to enjoy) out of the meat to a great degree. Old post, I know, but bargain priced whole cuts of beef sure do dry cure well. Better than all beef sausage in my humble opinion. Looks great! I can help you out with a cheap smoke generator that will definitely be adequate for that size smoke house. Let me know if you are interested. The a maze in tubes work great, though you have to have chimney draw..

I've seen pictures on the web of someone with a window unit in a smoke house. I don't know if that would work or not. If you had a large fridge or cool bot type set up, you could smoke most the year at night temps and move it to the fridge with humidity control in the day, not year round though. I c...

Nothing too fancy, all scrounged materials except for the concrete slab. Thats my smoke generator on the left and on the right is the port for the burner.

Well, I've finished my burner. Maybe someone building will find this useful. Works great and gets HOT! I messed around building pipe burners for a month and ended up buying the lp orifice and burner from sausage maker and I'm well pleased. I'll try to post photos, but no promises I can figure it out...

About got it finished. We had a baby this month, so not much time for hobbies the last couple of weeks... ill post a picture after I successfully fire the burner a couple times.
