Chris is correct....books are great but actually making sausages, curing meats, etc will get you up to speed much faster! Don't be worried about making mistakes along the way, is hats how everyone starts! Just make sure your cure % by meat weight and and your salt content are correct, and your sugar...

Yes, patties work fine. Good chorizo is supposed to be crumbly so all the little bits get crispy. You can freeze in patty form, freeze in bulk, in chubs, etc. All good!

I never cook my bacon.
I just smoke it for a few hours, par freeze for easier slicing, and then freeze.
It cooks in the pan when you cook it, no need to cook it before hand!

I suggest you put the fan in the dooor, not the side, top, etc. The door has no electronics and no freon pipes, etc so you can modify without worry. No reason to cut a hole in the fridge body itself. Dont think of binders as "bad".
They are very helpful and can be advantageous when used properly.

They will help give your sausage the texture, bind, and moisture you are used to having in a store bought product.
