Thanks Chris great recipe hopping you make videos some day. What attachment do you use on the 33 lb. mixer ? I have a old Hobart A20 - 20 qt and I have found the Pastry knife works really well. Like a poor mans Buffalo chopper Thanks for all your Posts and Merry Christmas Paul

I purchased a pastry knife For my mixer and it dose a great job I found the paddle attachment just balls up too much

I agree with Redzed about the creosote with the smoke generators the one I bought has no motor . The Amazen 5x8 trey using sawdust is cooler than the tube. I smoke my bacon two times for about 10 hrs with a day or more rest in between following Marianskis` metheod and is not over powering with smoke...

I have a smoke`n it #4 they are well insulated if you live in a cold climate , an Auber, Amazin tube and 5x8 that can also be used with sawdust ( i make my own from the pellets ) this way I have smoke all the time and control the temp. Hey , Guys
When I make longanisa ( Pinoy ) using cure #1 after grinding I put tin a lug over knight
in the ref. then put it in zip lock bags the next day. Can I put the sausage in the zip lock
bags directly or does a gas have to escape ?

I'm doing an orange whole pork loin using the UMAI bag, I was wondering if I cut it in half crosswise or lengthwise then put it in the UMAI bag that it should dry quicker but would it take away the quality by the shorter time ?
