Took 6 weeks to get there. NOTHING spoiled. No mold, crust was a little hard but every bit edible. BEST rye bread I ever...

Soy Flour

Fellas, I use soy protein concentrate when I smoke kielbasa. Running low and am doing some research on the use of soy flour. I can get a 50 lb bag of this for under 60 bucks with shipping. Throughout my investigation I see that it is also advertised as a meat binder at some sites. A LOT cheaper if t...

Yeah Redzed, things were a lot different in our younger years. I remember going through a pound of yellow bean seeds a season, I think we were planting "Gold Rush" when I lived up in Buffalo. Of course we would plant a couple of rows every two weeks. Pick em, steam em, some tub butter on them. From ...

Wife remembers a soup made with yellow wax beans, potatoes, (Vinegar) maybe some cream, ( Her mother died when wife was 10 so it is VERY vague) Definitely a Polish recipe. Need Some Help

Made some pepper sticks the other day, used 22 mm collagen casings. All went well until I let it sit overnight in frig. Smoked at 140 /150, raised to 160 when sausage was at 140 ish. Came out of smoked and cooled down in a cool water bath, roughly 60 / 70 ish. Let hang for about an hour and then ref...

Smoke

Making pepper sticks first time and I see that all the recipes do not use smoke. Anyone use it for snacks? Obivously it is up to the person making the sausage. Any pros and cons for the use of smoke for this product. Thanks in advance, Much appreciated. Fred
