Refreezing Pork

I have 5lbs of frozen ground pork butt to use in the B2 exercises. I don`t want to use it all in one batch. The USDA (see link) says that frozen pork thawed in the refrigerator does not need to be cooked before refreezing. That sounds perfect for what I want to do. My wife says no way but what do yo...

Grinders

Being a complete novice and heeeding my wife's warning about overspending, I bought a little used Moulineaux (French made) grinder. In grinder sizing it is a #5 and comes with only 2 plates. As I'll be dong batches up to 5 lbs, I am hoping it will do the job without burning out the motor - be patien...

Re: B2

I think that three month timeline is a thing of the past with the vacuum sealers that are available these days. We just gobbled down a pack of chicken sausage I made on March 26 of this year, perfect flavor and texture. I'm looking into vacuum packing but the downside for me would be making too muc...

B2

I'm signed on but I'm a little nervouse about expectations by CW and others. We are seniors feeding ourselves and occasionally guests. I'm aware of the 3 month time line for keeping frozen sausages and am hoping to keep control of my production accordingly.

Funny where the internet will take you

Tomorrow I start sausage making in earnest at a course at Stuffers in Langley BC. In the mean time I have been preparing my sausage making work area by intruding on the newly painted laundry room including a new stainless steel sink. But this post is more about my fascination with the internet and s...
