Well it turned out GREAT!!! Better than I expected. I smoked it at 150-175F, had a few spikes up to 225-250. Smoked for 5 hours, 20 minutes to an internal temp of 120F. So its still basically raw. Smoked Pork Butt

I'll be smoking a pork butt tomorrow and will try to post some pictures. It's been curing for aobut 4.5 days and I just took it out, rinsed it, did a test fry and its great!! I tied it up with butcher's twine to get a better shape and will smoke it in my cinder block smoker with hickory.

Thanks Siara. That's how my babcia use to do it. We keep the house at around 70-72F (22 celcius). You dont think that's too warm? And also the humidity may be much lower than what is called for in the recipe.

Im with you Chuck. I wouldnt take it personally though. I've always wondered myself how some of the large forums get off the ground and get the momentum going. I think many of the Poles on the Polish version of this site have a hard time with English. Just my guess.

What wood is traditionally used to smoke Kabanosy? Can I use a spare refridgerator to dry the sausage after smoking for the 5-7 days recommended? I can adjust the temperature to about 55F-60F. It's a mini fridge with a small freezer compartment that isnt frost free, so I assume the humidity is high....

It was about 120-170 depending on how close i moved the fire. I can probably get it much hotter if I needed.

Haha...I eat a lot of garlic!! I live out in the country. But the county fire marshall put out a burn ban cause its been very dry here lately. As soon as we get a few days of rain they'll lift it.
