Lion's Mane Mushroom Sausage?

Has anyone tried making sausage from Lion's Mane or Monkey's Head mushrooms? I had some today for lunch in a vegetarian restaurant in China, and you would have sworn these were port. They had a fibrous texture that was very meat-like and were seasoned like a sweet and sour pork dish. I'm always look...

We turn the whole hog into sausage.... Loin requires significant additions of fat for classic sausage recipes.

Most of the suppliers on Alibaba simply represent Chinese companies and are not really stocking dealers.... It's a huge pain to use. Occasionally I find something useful in their lists, but generally not.

It doesn't appear I can purchase food grade PVC locally in Malaysia, so I'll have to find a source to do this.

Thanks guys.

I had not considered hanging something off one of my stuffers, but I have a Frey and might be able to just buy an attachment - though I need a smaller size.

Patty forming equipment

Does anyone have experience with patty forming equipment? We've been making "seasoned pork patties" for a customer by hand for about a month, using an Italian sausage recipe. The volume has increased to the point where it's time to automate. I need to be able to control the size. These patties are f...

I have used chicken fat with skin in the past and I'm not keen on the texture. Pork back fat is still the best, though it does prevent the Muslims from partaking of the crocodile sausages. The owner loved the samples, but I do need to make up another batch without pork fat and using halal casings...

... What will be used for the casings? This just cries out for something exotic, but it's hard to beat good ol' hog casing. (Crockie- or Allie-casing probably is hard to come by.) Maybe something exotic for a gravy would be appropriate, when they're cooked? ...say, a nice sauteed puree of some sort...

These sausage taste great with gator and pork. I don't think there would be much difference with crock instead of gator, but you need the pork to give it succulence and bindability Perhaps you could substitute chicken thighs and skin for the pork. What will be used for the casings? They are ok with...

Nice to hear. I'll scale the recipe for my test sausages and see what my customer thinks.

I'm waiting on a reply for whether or not I can include pork in the sausages - I'll know on Monday... Sometimes being in a Muslim country has it's dietary challenges.

Big Guy, have you eaten sausage from that recipe?

Crocodile (camen) sausage recipe?

I'm going to be getting several kilos (could be as many as 20...) of local camen next week and need to make sausage from them.

Anyone have a nice recipe for crocodile sausage?
