Hey, that is really too bad about the goat leg! I was reading somewhere, and now I forget where about air dried goat meat, when I remembered your project and wondered how it was coming along. Great to hear that you are still entertaining yourself with sausages. Make sure you file reports on those b...

Hey Aaron! How about an update on that goat leg! I'm sorry to say that I have failed miserably! The farmer kept making excuses each week as to why they had not dropped the goat and it became obvious that they were all talk and no do.....I even arranged with them to drive to their farm to pick up an...

Now if you used a 50/50 kangaroo lamb mix you might have something there! I have never made anything like that and have never tasted kangaroo, but would certainly ...

Re: Pancetta question
I have some fresh pork belly (never frozen) and was thinking about making some Pancetta. The recipes that I have looked at require cooking after curing and drying. Can I turn this in to a ready to eat product by extending the drying time ? If so, what percentage of weight loss would I need to achie...

Re: Kangaroo meat sausage
Pioro, one of the members on the Polish WD forum was visiting Australia and while there made some sausage with Kangaroo meat. Pics and ingredients he used are below. So a question to the downunder gang, do you make kangaroo meat sausage? If so, how about some recipes? What about wallabies? 1000g ka...

Aaron, I would try his frozen Roo meat for sausages. Make Csabai and use 50% pork/50% roo. Mind you I have made Csabai with 100% rumpsteak for a friend of mine. They turned out good. So have a go Mate. Cheers, Jan. Csabal sounds interesting!.... OK..I'll give it a go...The pork I'm assuming to add ...

Over the years I have eaten plenty of Kangaroo meat mainly from flyers(Females) on extended hunting trips. Never ever made sausages though. We were all too busy getting the quota of 5000 Roos. Mind you this was many years ago when some stations were totally over run by them. Kangaroo meat is for sa...

Hi Aaron, Go to Ebay and look what they have for sale. Just search for Digital Electronic Humidity Controller. They are basically all made in China. Wiring instructions are included and they work great. You will have to wire them through a 3 pin plug though. Steve Plas in Perth has his wine fridge ...
