Well, let`s start from the name. As you can see on the picture, the shade of "kiełbasa biała" ( white sausage ) is white :smile: because it is not smoked. If you boil white sausage it will turn even more white. So white sausage took it's name from the color. Now about the milk. I've seen some recipe...

Dave Zac,the reason can be, that the ham was boiled for +/- 2 hours. Water rinsed away , fair amount of salt. For cooked products, I'll recommend ham press.

What watt bulb do you use, 100? Well, Just small explenation, this is not my dryer, I still do not have one. I like the dehydrator too, but with a bit smaller budget, you can build biltong dryer, which should also work for jerky.
