Hi Mike Yes the freezer is probably 10 yrs plus maybe. Thanks for locating that info for me. Hopefully its not poly but up to 250f that's kinda ok. Like u say when does it start gassing off. Maybe ill drill holes on the outside so it Will give any gas somewhere to go and not into my sausages...lol. ...

Mike What wattage element do u run in the smoker in the picture ? And is your unit insulated ? And square footage ? I ask because my freezer is 50 cf just trying to see what ill need to heat it. Mike Thats better control than I have I think, with my controller. Eventually I will probably change out the plug and play with a PID. Although so far I havent had an issue with high humidity. Where I live its always rather dry. Ill start with the extraction fan on a timer and see how it goes. Thank...

Mike Great looking setup, yeah the baffles/drip tray is super important. The last thing we need is a grease fire in our smoker. So your extraction fan turns on when the RH is greater then your high end setting on the controller? I dont have that option on my plug and play so I was just going to have...

Mike Yeah I kinda wish I got the PID instead of the plug and play as I feel they are more easily customised. No I was kinda thinking their casings may be sub par, you know buy casings from a casing supplier...lol. I only got them cause I brought a grinder and stuffer so I figured Id throw some casings in the basket. My bad.

Ill give the peel-able casings a try for sure, thanks for your help Rudy

Hi Ida

They were the ones for fresh sausage, from cabelas. Yeah the sheep casings here are pricy too, but I think worth it if they make a better product. Do you find the snack stick holds together fine after you peel the cellulose casing off?
