Darn!!! Bob, You can't keep Us hanging!!! We all love to experiment. I remember a bakery here in Buffalo named Kaufmans. My dad sent me a 8 lb NY Rye when I was in country in Nam. Took 6 weeks to get there. NOTHING spoiled. No mold, crust was a little hard but every bit edible. BEST rye bread I ever...

Redzed, I have use the Kutas book since I started to mess around with sausage making 10 years ago. I used my grandfathers kielbasa recipe (approximate) from back in the 50's when He had a grocery store and people would come from all over the neighborhood to buy from him. I remember also He used brea...

Soy Flour
Fellas, I use soy protein concentrate when I smoke kielbasa. Running low and am doing some research on the use of soy flour. I can get a 50 lb bag of this for under 60 bucks with shipping. Throughout my investigation I see that it is also advertised as a meat binder at some sites. A LOT cheaper if t...

Yeah Redzed, things were a lot different in our younger years. I remember going through a pound of yellow bean seeds a season, I think we were planting "Gold Rush" when I lived up in Buffalo. Of course we would plant a couple of rows every two weeks. Pick em, steam em, some tub butter on them. From ...

Need Some Help
Made some pepper sticks the other day, used 22 mm collagen casings. All went well until I let it sit overnight in frig. Smoked at 140 /150, raised to 160 when sausage was at 140 ish. Came out of smoked and cooled down in a cool water bath, roughly 60 / 70 ish. Let hang for about an hour and then ref...
Ross's Dough
Just what I have been looking for Ross. VERY light and perfect for the type of pizza we like. Followed your recipe to a T. Just added 2 tbs of peanut oil. Rolls are next. You ARE the Man!! Thank You, Fred As far as the pepper sticks, recipe need refinements. Smoke worked well but seems like somethin...
Thanks Ross, I got some cherry and apple, I like that combination when I smoke my kielbasa. Thanks for the tip. Much appreciated. Also, got a batch of your dough in the frig waiting for a couple of homemade pizzas tonight. First stab at it with Your recipe. Never measured in weight before making dou...
Smoke
Making pepper sticks first time and I see that all the recipes do not use smoke. Anyone use it for snacks? Obivously it is up to the person making the sausage. Any pros and cons for the use of smoke for this product. Thanks in advance, Much appreciated. Fred
