Got the pork bellies yesterday 13 lbs, Question: Leave skin on or take off? Seems the skin off there would be more penetration of curing mix and more flavor. Need advice. Thanks in advance. Fred :cool:

When I reuse "Food Saver" bags I will take a paper towel and throw a little hydrogen peroxide and wipe out the bags before packing. Will let them dry out in a couple of minutes and pack the goods. I use H2O2 quite a bit since it breaks down to water and oxygen. :cool:

We have a Costco down here near me. Are the meat prices comparable to RD? I never seen anyone beat their prices BUT if they are in the ball park. Never been in Costco. Thanks Workingpoor

Thinking of giving it a shot at making some bacon. I see some really interesting recipes. Got a couple of questions for the pros who have done this before.
