Thanks Maz,

I misspoke. I can print it; just can't open and/or edit it. I like to have the facility of changing quantities or substituting ingredients to suit my own tastes.

Happy Easter!

I also noticed when I finished stuffing the casings and disassembled the grinder for cleaning that there was some greyish colored mush where the auger housing attaches to the main grinder motor. I'm guessing this was just some meat that squished out of the grinder housing? Anyone ever experience th...

So! It's obvious that you have "Moderators Stressor Disease." It is marked by incoherent outbursts, irrational invective and left over medication. There is, of course a pill for that! It's called, Lithium. Your continuous remarks about my attire would suggest that your mother or wife still d...

Chicken, Chicken, Chicken! You would be known as a Cheechako. Only those who have tasted the iceworm are worthy of being called a 'Certified Sourdough.' There is so much game up here that I rarely hunt anymore. My freezers are full of donated Elk, Deer, Moose and Bison. I turn down offers o...

What formulations have you found that benefitted from the use of phosphates or other similar product? I can't answer your question as posed. My focus has been on finding alternatives to chemically adulterated products. I haven't looked for beneficial formulations. Len Poli's "Smoked Beef Summer Sau...

I totally support your choice to avoid binders and such. I had a heck of a time getting just the right texture on my sausages and found that a smidge of binder fixed it right up. Hopefully, my observations did not confuse the issue. There are definite circumstances that require the use of binders, ...

Ice worms are only found in certain areas where blue ice forms, below the snow covered white ice. They are tasty little critters, much like crayfish or scampi. Despite their name, they can only be eaten fresh; freezing and thawing them leaves only a gelatinous liquid. They will keep up to three days...

Hey Jer, Sonoma Mountain Sausage - Leni Poli's site is where I started out on this venture. They have a huge offering of tasty products. The site's owner is a Microbiologist and has worked for a major commercial sausage maker as an advisor. With due respect to Len's formulations, my switch to this s...

Calm down Cooter! 7" of snow huh? Wow! We call that "hard rain" up here. I`m not surprised that you had to seek council, nor where you went for it. The Chief is just pi$$y since Wotta Lotta and I got together for a weekend. He suggested that I marry her and seemed quite offended at my hysteri...
