Jan, I have the low-end Masterbuilt propane-fired unit, and a low-end electric Masterbuilt (actually three of `em, because they don`t work very well). I couldn`t get the propane unit to fire below 225 degF, so I bought a controller (off-and-on, so-called "bang-bang" controller) and hot plate. These ...

Please don't take this as "one-upmanship," but we just returned from visiting Sister-in-Law's property in Colorado. A year and a half after the Black Forest fire, they are just now able to cut down ten acres of dead trees so they won't fall on anyone and kill 'em. They hauled the logs off last week....

The best recipes for gumbo start with "First, you make a roux." I've used the recipe in Paul Prudehomme's first cookbook for years, although I vary what's in it quite a bit. One time at a beach rental, we had an extra ingredient: if you cook with a high smoke point oil, it's possible to melt the pla...

Crawfish sausage for sure. I can always wear some of the drippings on my shirt so who needs a tourist shirt? My grandsons and I maintain that "If it's good enough to eat, it's good enough to wear." The area along Frenchmen Street is becoming what the French Quarter used to be, fifty (or more!) year...

Crawfish Sausage - Worth Visiting New Orleans For Hopefully you have visited New Orleans at least once in your life. It seems to be considered a right of passage for college kids at Mardi Gras time. During football season... well, we probably shouldn`t go there, this year. For the rest of us, howev...

If any of you are into cooking in cast iron pots/ovens here is a good article on seasoning them with flax seed oil. Flax seed oil and seasoning cast iron. Good article, despite the error on nitrates in bacon: ...many people substitute bacon drippings, but this is a bad idea. If it`s conventional ba...

...A bottle of diluted bleach... handy wipes... ...great ideas! I'll do that immediately. My clean-freak friend would say that you should bleach-treat anything wooden, even after washing thoroughly. But soon, in yet another bid to support Corporate America, our congress will declare doughnuts a food pyramid in themselves- - fat, sugar, and flour.
