Need more guidance. The casabi has cure 1 in it. How long will this last as the meat is not cooked. Will follow the program as suggested. Second day in the fridge. Cooked up a patty left from stuffing and it is tasty. Mike

Casabai Overnight in the fridge then stuffed. Had some air pockets to prick. Can't hang in the fridge, so I put them in a brown paper bag. Now wait 3 days and then smoke. Hope I got the casabsi recipe right. Stuff and put in the fridge for 3 days.Then cold smoke for 3 hrs and back in the fridge for one day. Then cold smoke for 8 hr and back in the fridge.???????

Sawhorseray do you have a sausage recipe for the honker. That is what comes through here. Never heard of a specklebelly. The boys that hunt have a chocolate lab also. She can catch a pheasant in the air, don't need a gun. She is getting older now and starting to injure herself, but a lot of heart.

Snagman or CW can you go over the cold smoking process for me. I have an electric smoker and a A-maze-n pellet smoker box. If I am right, it would be the pellet box and no heat.? Some heat from the burning pellets. No internal temperature, just drying.? All confused and want to do it right.

Question Is the stuff at the mini mart cured with #2 because it sits there a long time. I have never seen any mold on the outside. My wife loves the cactus jack, She says you can even taste the meat. I did not crack the caraway or toast it, next time I will.

Thank you Baconologist. That might be the answer. With the boys I have a hard time with just breasting the bird. (waste not want not) Sausage maybe the answer if they get fat and skin as in the link you gave me. I did print it out.

CW said no question is to dumb. On the hot dog recipe you gave JBK's. Would carnations non fat milk be ok instead of soy protein concentrate. It is more readily available.
