Crusty044 you are right that cure is not needed, but I want the pink color in the finished product. If you don't want to add cure leave it out.

I shoot and then cut into major pieces within hours of the kill, it then goes into my spare fridge for a week. then I do the final butchering. It works for me.

If you do it in wide mouth jars it should work, it will look ugly in the jar but it should taste fine.

The taste is very similar to the Hormel product. I rushed the last shot, the meat could have cooled more and the voids would have had gelatin in them and the outside edge a little firmer. Yes it looks like a lot of pepper and it has a little after bite, not a rip your face off heat.
