Just wondering if it would help to cover the exposed area with bacon or softened lard to slow the dehydration process and avoid the drying of it too fast. Thanks.

Drying prosiutto

My brother and his friend have made and are drying 3 prosciutto hams. The guy drying them is using a dehumidifier to help the drying. I told them that seems like a bad idea, as IMHO, time is needed in order to produce a proper product and not force it. Any input from you would be greatly appreciated...

I'm in the same predicament. Amazon has a lot. I'm leaning toward American Weigh brand. Very good reviews and cheap, almost too cheap. Can anyone recommend a good brand or price range. Thanks.

I use it in my jerky. 1 tsp per 5 lbs of meat. Anymore and it's over powering. I tried several brands and like the Sausage Makers the best. Good luck.

Sam's sells a lobster and shrimp ravioli the Mrs. enjoys.. We make it with Alfredo sauce. Very tasty. Only thing I'd change, is add more stuffing.
