My 2 cents worth. If the pork loin is less than 2 inches thick, it does not have to be injected. Over 2 inches it must be injected with cure and brine. Expectations - First Smoker

I`ve set up my work area in the laundry room because my wife is a very active cook and I don`t want to be under foot because getting the look is scary.
