If another Texan could offer a suggestion that will subtly alter the flavor (for the better) when using coriander. Start with whole coriander seed, lightly toast it in a dry skillet on low to med-low heat. Then grind and measure as you would normally. Think you'll like the difference.

partycook, I have a small 3" fan (don't know airflow) that just runs in there and keeps air circulating 24/7. Should I have the fan tied (so-to-speak) to the humidistat? I have temperature dialed in pretty well; the humidity issue is confusing the heck outta me. I have another post in this section called, "Stalking the elusive humidity" where I am chasing this.
