Swedish Potato Sausage (Potatis Korv)

Just made 3lbs of the Swedish Potato Sausage (Potatis Korv) that I found in the Meat and sausages / recipe section. I have to say it's an easy recipe and the final result was excellent. The only changes I made and will make the next time is; I added some meat binder, half of what is called for on bi...

Redz, how long would you boil those pork skins for?
What are you looking for to really soften them up or leave a little chew to them?

I too only have an experience level that pertains to refrigerators. I really like using Inkbird Controls for heat/ cooling - hum/dehum Inkbird work great and has both *f & *C set functions. https://www.amazon.com/Inkbird-Itc-308-Temperature-Controller-Thermostat/dp/B01MDSWXY4/ref=sr_1_3?ie=UTF8&qid=...

Free Juniper Berries

Fellow members, I bought a 1lb bag almost a year ago. I purchased way too much, as I only used about an 1/8 of that pound. I do not have any demand for the dried juniper anytime soon and do not want them to loose anymore of there potency and/or value. Again, I have no plans to use "ALL" of these jun...

jjnurj, Egg white is often added to sausages to increase binding of ingredients. It should be noted that only the egg white possesses binding properties. The egg yolk is a good emulsifier but contributes to more cholesterol and calories. I'm guessing it's a personal thing, I'd use only egg whites, u...

Thomas, your in the right place to get answers, so be patient. I have some knowledge of what you are doing, but not on such a large scale as you.
I'm interested to see what others have to say on your project, then maybe just maybe I have something worthy to add.
Don't go no where!

I must say that Amazon offers stuff at good prices.
Just got an email from "Meat Processors", big winter sale, so I checked it out.
Not much of a sale, they have this exact food processor I mentioned above, on sale for $189.
Amazon, sells it for $167.

Food Processors

Did a little research on food processors, as I'm looking to get a new one, with largest capacity available for home use, and making emulsions. I landed on this model at Amazon https://www.amazon.com/Cuisinart-DFP-14BCWNY-Processor-Brushed-Stainless/dp/B01AXM4W3A/ref=sr_1_3_sspa?s=kitchen&ie=UTF8&qid...
