Glad you got it Oxide, keep with it and you will feel a lot better for it. The FDA approved crap is just that CRAP fed to the trembling and huddled masses yearning to be fed a free lunch at the cost of their very lives. Just look at a FDA approved Big Mac served by the bazillions at Mc'dicks that ca...

Here in Manitoba we also sometimes tap Birch trees, but sadly running the rest of thr farm usually takes up to much time and energy to make with the sweeter things in life so we po' folks jus have to do with sweet glover honey made by our specialty trained Northern attack Bees instead . Damn it's ha...

I also use mineral oil, as a matter of fact I use it a lot. I use it on all of the wooden kitchen gear such as maple cutting boards, maple counter tops and walnut butcher blocks. The only thing that I do differently is I melt in 15% paraffin wax by heating the oil ALMOST to the smoking point, I then...

Personally I can't stand collagen casings. My local butcher has switched over to using plastic casings, because as he says many of his customers are getting picky and no longer want the natural casings, I guess they are the stupid ones. He says that the new plastic casings are permeable to smoke so ...

I prefer the vertical cuz like when I'm using my Dick I really like to slam the meat home, not so easy in the horizontal position. However both styles work.

Slamming it in goes a long way in preventing air bubbles.

Rice

A friend of mine with a oriental dinner told me to cover the rice the depth of the second knuckle on your middle finger with your hand flat on top of the rice. With only very minor differences it works for all the different rices I have made, Sticky, long grain, brown, and Basmati. Not near as perf...
