they dress out around 1000 lbs, sort of like shooting one of your steers with long legs in a swamp, we cut it into 6 or 8 pieces and carry it to our ATV to get it out. It is lots of work :mrgreen:

I thawed out some of my game meat I collected last fall, 3 sirlion(football) venison roasts, one moose round roast and a caribou round roast, injected and into my brine solution for the next 10 days, then I'll coat them and smoke with cherry wood, cool, slice and package http://i35.photobucket.com/a...

Yes mine does the same, it overshoots and then under shoots, I have a hard time keeping the smoke coming, Ialso have a propane fired smoker and will get another one, I'm done with the electric. They are ok for chicken, briskets, ribs, etc, not so good for sausage where you need fine control.

OK it looks like it will fit my stuffer, I measured mine and it was 53.49 mm so its very close. I'll pm you where to send it.

I take my cleaning brush, wrap the bristles in saran wrap and then push the meat out the nozzle of my stuffer into a small piece of casing, any meat in the bottom of the stuffer gets stuffed into the nozzle and also pushed into the casing. :lol:

to me I would add some fat, pork tender loin is too lean to make a good sausage, it will be too dry. I like 20-30% fat in a sausage.
