Ha ha ha For me at that age, it was dealing with the blood and trauma of the actual killing of the hogs. Though I was raised knowing exactly where my food came from, I showed these animals at 4H, FFA and county fairs. I cared for them, fed them, nursed them through illness and even slept with them o...

Growing up, we stopped feeding the pigs 48 hours before slaughter, and only watered them. This limited the amount of feces at slaughtering time. Cleaning the intestines was one of the jobs that came to us kids. It was smelly, but no worse than cleaning out the pens every day. Hog intestines were flu...

Most of the local sausages are halal beef and chicken sausages. There are a few shops selling pork, but with very limited options at severely inflated prices. Though Malaysia is a Muslim country, the population where I live is 60% Chinese and they buy lots of pork from the wet markets. I bought samp...

Thanks story28. I've read thru most of your posts on the forum and appreciate your sharing. My business plan looks reasonable and I've arranged to rent space temporarily in an existing commercial kitchen with all of the logistics in place - just needs my specific sausage making equipment and labor. ...

I have spoken to the local slaughter house and they will be cleaning casings for me very soon. Depending on how much I need to purchase - we are still discussing this - I may be selling them myself. In the meantime I'm purchasing mail order from Australia. http://www.countrybrewer.com.au/ I was not ...

Rudy, 3M makes food grade tape. I'm sure others do as well.

I'm not sure where you can find it, but I would have to believe Spokane or Coeur d'Alene would have it.

I took the time to roast the whole seed spices tonight for a large batch of Longganisas. I like the taste of the test batch better than not roasting them, prior to grinding.

What makes me think there is real opportunity here is that this business is all from the first 4 customers I have contacted. No rejections at all so far. Every contact has resulted in immediate sales and promise of future growth (the breakfast sausages are flying out the door and he will be doubling...

My intention with the building would be to set up a shipping/receiving area in the back with two large double door refrigerators. One for incoming meat and one for packaged, outgoing sausage. I would continue to purchase meat from a butcher and not the slaughter house, so incoming cuts would be mana...

Trichinella can be killed by heating it above 140 °F but prions cannot be destroyed by heat and it was here that the industry went wrong. I knew pig farmers that fed their pigs restaurant food waste and some that also ran garbage collection service to collect eatable garbage to feed to pigs. This p...

Sausage making as a business?

I started out not very long ago making sausages as a hobby, as I suspect most of you did, and I have found very quickly that it has turned into a hobby business. There seems to be a pent up demand here that opens up new opportunities every time I speak to anyone about real pork sausages. I have a re...
