Grinding Plate Size

Going to make some pepper sticks. Have 22 mm Collagen casings. Would appreciate what size grinding plate to use. 1/8 inch too small? Thanks guys, Much appreciated :grin:

Just for a general heads up, an outfit called "Restaurant Depot" has boneless pork butts for $1.49 a pound for the month of July. Bought a case while up in Buffalo lately. Does anyone NOT use a binder when making smoked Polish sausage? I'm smoking about 15 lbs now and have used the Rytek Kutas recipe of using soy protein or powdered milk.
