That looks like some mighty fine eatin right there!! I wish I was your neighbor because I would give you all the wood chips you needed if you were bringing food like that over!!

Thanks Gringo, My fire box will burn chunks with a nise steady smolder if I control the draft. With the weather here topping out at about 45 cold smoking is easy. Pecan is a bit milder that hickory. I have maple and apple on the place. I get oak when I prune one of my trees.
I posted last night about having a bucket full of hazelnut shells. Today I smoked a little piece of cheddar cheese with them. If someong lives near a nut processing plant it would be worth while getting a couple of bags.
