I took half of one of the rolled pieces to my hickory supplier. I have another batch that will be ready in about a week and I will take him another. If he gets used to that maybe he will keep me well supplied with hickory. He cuts the slabs on his mill and we are neighbors.

That looks like some mighty fine eatin right there!! I wish I was your neighbor because I would give you all the wood chips you needed if you were bringing food like that over!! :lol:

Maybe I need to send you some Mesquite or Pecan for your smoker!!! :grin:

Thanks Gringo, My fire box will burn chunks with a nise steady smolder if I control the draft. With the weather here topping out at about 45 cold smoking is easy. Pecan is a bit milder that hickory. I have maple and apple on the place. I get oak when I prune one of my trees.
I posted last night about having a bucket full of hazelnut shells. Today I smoked a little piece of cheddar cheese with them. If someong lives near a nut processing plant it would be worth while getting a couple of bags.
