Just getting back to the biltong question:
It is definitely not being cooked and nitrite is optional. It is used in a fair amount of commercial product, but not all and in general not by home makers.
Me for one have been eating it for years and in our climate we have a weight loss of 20-30 % within 2-3 days (the meat is soaked in a vinegar-worcester sauce mixture for up to 24 hours before putting on the spices (salt, black pepper and coriander) and hanging out to dry. the biltong box keeps the flies and dogs/cats out and contains a small fan and lightbulb)
