Assistance and Ideas needed

Tonight we had a birthday celebration for the wife's grandmother who turned 87! Of course all of the family was there and they are some of my biggest fans when it comes to my cooking.

Well, Uncle Charles asked me if I could make a beef Italian sausage for him like he used to eat when he was in law school 42 YEARS AGO! :shock:

I have looked and searched and cannot find an Italian sausage recipe that calls for beef in lieu of pork!

What are the thoughts of me using this recipe and substituting beef for the pork? I will add fat as required to make the consistency.

What is the name of the new book? I'd like to get it.

I went with a 75/25 beef/pork combination following the recipe I posted originally.

The pan fry patty test turned out well, but the finished product was really good after stuffing and SLOWLY grilling with indirect heat.

The beef I selected to use was very well marbled with fat and the combination of the pork gave it a good moisture level and and a very different flavor.

For the fennel, I could only get whole seed so I lightly ground them in the pestle and I also added some fresh oregano as well. I like the fennel "crunch" now and then and the oregano imparted a nice Italian flavor too.

I'll see about pics when the wife gets the camera back over to me.
