A friend of mine is looking at starting a sausage biz in Austin, TX. Does anyone know of some quality meat suppliers/purveyors who he should look at?

Maybe your friend can look in the yellow pages for a start and then perhaps go on line and do a search for wholesale meat suppliers in the Austin Texas metropolitan area.

Oh this is not a dry cured sausage or charcuterie biz. It's just a street food cart looking to do really high quality sausage.

I've already contacted a bunch of places using the general search method. I was just wondering if anyone had opinions on who were the better purveyors.

Those guys use a few different breeds so you are sure to find some good sources by calling them up and asking who they are using.
