If everything works properly and produced the goods I would put a drain into the bottom of the chamber with a hose going into a collection container.
Some fridges used to have this as a factory standard. If you decide to put a drain in, make sure you have a piece of flex stainless wire or thin plastic string inserted in it with enough protruding out both ends to use it as a pull-through to clean the clogged tubing as this so often happens.

...guess I might add that, if there's a way of cutting back on humidifier rate, you might try it. Can the fan be run more slowly? Can the internals be modified to reduce surface area of the material from which the water is evaporating? Is there a heating element that could be disconnected? (...visions of mad scientist with hammer and saw...)
