When Jason and Carolina first announced their intention to open a shop I considered the many pitfalls involved in such an effort and stated as much. I am delighted that they have been able to sustain the effort and are starting to be able to see some daylight.

If it looks like a duck, walks like a duck, and quacks like a duck, it probably needs more time on the grill! :D

I think it's great to have a love and passion for something like a small meat market making sausage or a bakery making bread and such. It used to be a wonderful rewarding undertaking.
Unfortunately today, the local laws and ordinances, along with the local health department laws, make it virtually impossible to start-up a small business that is profitable. The start-up costs and politics of jumping through hoops can take all the enthusiasm out of such a plan. Kind of sad really.
