Peanut fed pigs

I mentioned something the other day about soft fat on peanut fed pigs and Redzed asked about it but I was unable to find the paper where I got the information. I knew I had bookmarked it somewhere in the computer but couldn't find it to save my life. Anyhow, I found it this morning buried in one of my work folders. (This should keep me from goofing off at work) :D

Anyhow, this is a pretty informative link which explains a lot of stuff some might find interesting. The specific reference to the peanut fed pork is on page 28 but there is a wealth of other information here as well so I'll add the link for those interested.

Good read Butterbean, thanks for sharing. Funny how the best hams in the world are finished on acorns, but peanuts are not recommended. I guess it's all about the amount of oil in the peanuts.
