Cajun Andouille

Here's what I put in it:
Boston butt, cure #1, morton kosher salt, black pepper, msg, onion pdr, garlic pdr, paprika, and cayenne.

Yikes Fage! That stuff looks good enough to eat! I like your smoker. Did you build it yourself? Nice job ol' timer! Hey, you're on a roll now. What's next?
Isn't it great to by-pass the supermarket stuff and enjoy your own recipe? :wink:

Yep I made my smoker out of an old dishwasher. I have been working on that andouille recipe for a year now and I think I finally have it just how I want it.

I checked out your terrific smoker photos in the hardware forum. Cool! How about posting your andouille recipe here? I'd like to make some as good lookin' as yours turned out, and I'm sure a few other folks would too. Keep up the good work fagesbp!
