We just purchased 60 pounds from Restaurant Depot for $1.58/lb. bone-in. Two large Coppa's in the deep freeze on a four week nap, 25 lbs. Hot Italian, 25 lbs. Sweet Italian, and a sample batch of Salsiccia con Vino e Formaggio which we really enjoyed.

Will need to make another trip to the Depot real soon!

I pay about $9 NZ (9 New Zealand Dollar @ 0.7673 = 6.91 United States Dollar) a kg for pork. $7NZD for a whole pig (bone skin etc). That is half a pig (cut up to how I want it), this is free range. It is not organic as the cost of certifying is a lot. Also they occasionally feed with supplements which may contain saya. No crates etc. I use the bones for stock, the best cuts for grilling etc. The ribs for barbecue. I do end up with a bit of skin which goes to waste. The farm/butcher (cressey) is about 20 mins drive for me and he is keen to help. This is the best pork I have ever tasted.

If I wanted the above + anti-biotic free I would pay the same but the farm/butcher is about 4 1/2 hrs drive for me. THey would courier it up at an extra cost. I have only tasted their small goods and so I do not know what I could do with their pork. There ham is the best I have ever tasted. I go down to Dunedin a couple of times a year,

I can buy pork shoulder for between 8NZD and 14 a kg bone in from a supermarket. It is factory farmed and could be from NZ, Australia or China. Taste wise it could be from Mars. If I want to buy cuts from cressey I will pay slightly more, but it is so worth it.

This week pork shoulder is Aldi's meat of the week and they are $1.99 lb for boneless shoulder. They come vac sealed and range from 8-10 lbs each. Quality is damn good and most all of them still have the fat layer on one side. I've used them numerous times for some great sausage.

Not sure if you have Aldi over there....

Just bught a side of pork at a net cost of $5.21/lb. More than I pay for loins or butts but I wanted to practice butchering and try cuts I don't normally get at the market.

I stopped at Aldis today, and they don't have any pork shoulders.
On the other hand, Restaurant depot has no expiration date on their pork shoulders, some people told me you're lucky it it doesn't stink......but you can return it within 3 days......

And that reminds me when the old lady was selling poisoned mushrooms on the farmers market, and somebody told her about it. The lady answered, Do not worry my darling, I did not pick it for myself, I picked them for sale.......

I'm going by Aldi right after work and I hope they have them. The one by me here doesn't seem to get that much foot traffic during the day. Last time they had this sale, they had 4 in the case when I went in around 4:30. Cross you fingers for me.

A little later I'll delete this posting....

Well I tried, but looks like that doesn't work.
