Mineral oil. It won't go rancid and it will seal well and seal quick.

I ended up lining with parchment. Its working great

Lou, when you have time I'd seal it to keep moisture from getting in the plywood which could cause it to buckle on you. In the past plywood was glued with formaldehyde based glue and was more of a problem than it is now that they have changed the glue. Personally, I wouldn't worry about the glue but I would about the veneer buckling. The oil should do the trick though.

How long should I press them? Every 3-4 hours, i am able to torque another 1/4" on the nuts. I'm just pushing the top board down and hand tightening the nuts. These things are about 8-10 pounds each. When I pull them and hang them, will they hold shape or will gravity take over ?

Two days should do it. And it probably would be a good idea to also string and hang the the bottom end as well for the first two weeks. And as Briacan said, its amazing how much pressure these things take.

130 Kg is 286 pounds. Unfortunately with a threaded rod, now that I started torquing them down, I have no idea how much weight I have on them anymore

If you are going to really crank them down I would at least get some big washers under the nuts. Better yet crossmembers made from 2 by's.....or the corners may warp/bend.

They went from close to 5" diameter to 2 3/4" flattened. I pulled them and hung them. We will see if they hold. If not, I will clamp them again. The sample meat mix in a ramekin is still in the chamber and it's pretty rubbery,,,so hopefully they will hold. If not, I will clamp them again. I torqued the shelves down on a slight angle, so the juices rolled off the parchment onto the bottom of the chamber. The boards stayed pretty dry.
