I've been using the Maverick et735 , The bluetooth range isn't the best. come with 2 probes but it has 4 ports if you want to add more. I'll be buying soon, a Fireboard fbx11 , has wifi and bluetooth and comes with three probes and is capable of handling six. I guess a lot would depend on your budge...

Hey Butterbean, in your original post you mentioned Penrose pickled sausage. A friend from down south always talked about the stuff but I could never find a recipe for it.
Any chance you have one to share? (or is the secret to the taste just the pickle? )

Len Poli has a great recipe for bologna on his site, and it also makes a great hotdog. he mentions smoking at 190° which I think is to hot, but I use high barrier casings and poach mine. good luck on your project! :grin:

, it's pretty darned hard to crank for 20 minutes to get a proper mix. Is it mixing with the machine that causes it to take so long, or do you also spend that much time hand mixing small batches? I've never owned a mixer, only do small 10 lb or less batches but never spend more then 5 minutes mixin...
