Crock Pot/Slow Cooker Santa Fe Beans (one of my fav foods)

Slow Cooked Black Beans
1 pound black beans
5 cups chicken (home made tastes better) or pork stock (my preference. I make my own. Never seen it in shops) stock.
1 onion, chopped
1 large chipotle in adobo sauce (at least one tablespoon of sauce)
4 cloves garlic
Cured pork skin
Pork/ham/bacon bones
Salt to taste (sorry I am vague about this, but it depends on whether you use cured pork skin, bacon/pork or ham bones and your taste). Do not add salt to the beans before they are cooked
1 tablespoon lime juice
1. Sort and wash beans and soak in water overnight. .
2. In the morning rinse beans and place in slow cooker.
3. Add 1 cup of water, stock (broth), onion, chipotle, and garlic.
4. Cook on low for 8-10 hours or until beans are tender and done. During cooking the beans may need more water, add boiling water (go easy on it). When the beans are cooked you can mash some of the beans or all of them, whatever you fancy.
5. Add lime juice and salt after they are cooked.
6. The beans taste better reheated the following day.

I make large quantities of this. I use it for Nachos, as an complement to barbecued food, wraps, instead of baked beans (even on toast), on oven baked spuds. Yup I love em.
