Wow, that does look like fun! Too bad it's catch and release because smoked sturgeon is delicious. But then, you've got more time to drink beer after the outing since there are no fish to clean. :D

I was busy these last few days. Each year at this time Thrifty's have whole pork legs on sale for a buck a pound. This year was no different but I was somewhat surprised that price was still a dollar (0.78 cents US) a pound, because the price of pork (and all other meats) have gone up exponentially. I bought 8, taking the biggest in the bin, for a total of 196lbs. That's more meat than you can get from a whole market size hog. I boned out all the legs, cut off the hocks, made some hams for smoking, one for dry curing, and divided the rest of the meat into 3 classes for sausage and froze it. Meat from the hind leg is choice when it comes to making sausage as it's flavourful and makes a softer tasting product.

I haven't been able to get any deals to speak of this year (meaning past 4 or so months). But I did get access to Restaurant Depot through a friend, so I am hopeful that I can get some of the bigger cuts at reasonable prices. I do have somewhere between 6 and 10 pork butts frozen since last spring/summer. But I was waiting for things to cool down here in GA. And when I say cool, I mean get cold. That has happened...we had a strangely hot holiday period. Right now I have another 18 or so days I can deer hunt with a bow in the county I live in. I have been trying to maximize that time and have only made a few emergency provisions.

But there will be more sausage on the way...soon, very soon I hope.

Nice elk. We have a late season cow hunt here in Alberta. I was just out in this cold snap before New Years, it was -33. I got a nice cow, had to pack it 3 1/2 km through the snow.

Got out on the water yesterday for the first fishing trip if 2022. Calm day, no swells and a temp of 8C. The three of us pulled in 12 nice salmon, nothing big all between 8 and 11lbs. Of course we took home 2 each, current limit. Chinook salmon at this time of year are the best tasting, soft, delicate and mild tasting. We also set out prawn traps and kept our limit and returned the rest to the sea.
